Yer to funny. I've got four hams and a corned beef under my belt. Just picked up a 20 pound fresh ham, that's gonna get a brine tonight, a pig side for bacon and a loin for Canadian bacon. Oh! And 25 pounds of venison for sausage in the fridge. BTW, going to a good butcher sure is cheaper! I paid $1.69 a pound for that ham.

20 pound ham is in brine, 10 days for that. Two tenderloins dry curing in tender quick, brown sugar, onion and garlic. In 6 days it will be ready to smoke. And finally, two rashers of bacon on the cure. One is plain with brown sugar cure, the other has black pepper, garlic and bay leaves in the brown sugar cure. One week for these.
