Awesome!
Time to make queso blanco cheese, a basic cheese that uses vinegar as the acid to create the curds.

Added the vinegar.
Draining after I added salt...

The cheese is done! Very good taste, lightly flavored, as would be expected with a fresh cheese.

Aww man that looks good. Do you have any plans for the Super Bowl? You could blow everyone away with all these homemade cheeses.
You post some cool stuff! Why use raw milk?
You should make a mold to put it in.

Raw milk just tastes better! Most of the store bought milk these days is "dead" milk...treated to such a high temperature as to kill off anything, it also destroys many of the vitamins and minerals, causes the calcium to precipitate out, and destroys the proteins. So, while there are some cheeses you can make with it, it just isn't a superior product.
This is the first batch I've ever made! I don't yet have any molds, but will likely acquire some in the future.

Yeah, raw milk is supposed to be much better for you than the pasteurized stuff. I've never been able to get my hands on the stuff. I hear where raw milk really shines is cheese making, and that raw milk cheeses just taste way better than what you can buy in a store. There used to be these "secret" dinner clubs in Atlanta hosted by local chefs, where the dinners would meet at a house and the chef would cook up these incredible meals using ingredients that they cannot use in a commercial restaurant, like raw milk.
