Having a choice of what gun to carry is good as long as you practice. I had a co-worker on the PD who used to do plain clothes work quite often and he wore a shoulder holster when he did. However, when he went to the range to 'qualify' he wore his regular duty belt. Well, as luck would have it, one day he had to go for his gun while at work and guess what? His hand instinctively went to his WAIST and not his armpit. All turned out well but he changed over to a belt holster the next day. The moral is 'Practice like you intend to Play'
Isaiah 6:8 Then I heard the voice of the Lord saying,
"Whom shall I send? And who will go for us?"
And I said, "Here am I. Send me!"

Thats the way to do it. Keeps all the kinks ironed out.

And don't forget to practice in what you would wear out on the town. Not just in your range clothes.

Instinct only goes so far. There have been MANY arguments during my years of training regarding 'muscle memory' (I HATE that term) and if you can 'train' your way out of instinct. If someone throws a punch at your head, you'll flinch - I don't care who you are. The key is to make the flinch work for you and not try to work against it. You're correct in thinking of picking one carry mode and sticking with it. Remember, you'll play like you practice. I like to say if you know you're going to fight in a mud hole, go find a mud hole a practice in it.

My favorite (and only! LOL!) CCW is a Springfield XDSC .40 using a CrossBreed Supertuck IWB.
