Well, I put the tenderloins in the fridge for tomorrow, and put up the backstraps in the freezer, and started four hams. I hope they turn out right! Got the salt from Peacock Meats here in Warner Robins. The guy was very helpful and told me what needed done. Just hope I followed his instructions!
